Instructions
Preheat the oven to 350F (180C).
Put all the dry ingredients in a bowl and stir.
Add the olive oil and mix well.
Add the honey and continue mixing.
Line a baking sheet with parchment paper and make small balls of dough..
Press the balls down onto the tray with a fork to make a crosshatch pattern. This will look similar to a traditional peanut butter cookie.
Sprinkle the tops of the cookies with sugar and bake for 10-12 minutes.
You will want them to brown a little but not too much or they will be too crispy.
Remove from the oven and cool on a wire rack. They come out very soft but will cool as they harden.
These are crisp cookies and will stay fresh in an airtight container.
