Besides the usual cookie recipe ingredients of flour, brown sugar and baking soda, these cookies include delicious:
- Honey

All four of these ingredients are notorious for their health benefits. Honey and spice is commonly stirred into hot water to make a soothing tea for head colds or to aid digestion.

Ginger
Fresh ginger is famous for it’s healthy properties, and ground ginger is much the same, aiding nausea and is an immune-system booster, plus it has anti-inflammatory and anti-fungal benefits.
All of these medicinal ingredients are then mixed together and baked, and while they may not be 100% saintly – after all they are cookies – they are healthier and much tastier than cookies out of a box!

My cinnamon spiced cookies recipe made with ginger, honey and olive oil isn’t alone. This flavor combination has been a classic throughout the centuries and around the world. Here are some of the countless creations combining honey with cinnamon and/or ginger:
Ancient Roman Honey Cakes: Not quite the cakes we know and love today, in fact, they probably resembled more of a bread, but they were flavored with cinnamon and honey which was used as a sweetener long before sugar was traded.

Cinnamon Spiced Cookies With Honey and Olive Oil
Ingredients
- 1 ¾ cup All Purpose Flour
- ½ cup Brown Sugar
- 1 ½ tsp Baking Soda
- 1 tsp Ground Ginger
- 1 tsp Cinnamon
- ¼ tsp Salt
- ⅓ cup Olive Oil
- ⅓ cup Honey
- 1 tsp Sugar for tops of cookies
Instructions
- Preheat the oven to 350F (180C).
- Put all the dry ingredients in a bowl and stir.
- Add the olive oil and mix well.
- Add the honey and continue mixing.
- Line a baking sheet with parchment paper and make small balls of dough..
- Press the balls down onto the tray with a fork to make a crosshatch pattern. This will look similar to a traditional peanut butter cookie.
- Sprinkle the tops of the cookies with sugar and bake for 10-12 minutes.
- You will want them to brown a little but not too much or they will be too crispy.
- Remove from the oven and cool on a wire rack. They come out very soft but will cool as they harden.
- These are crisp cookies and will stay fresh in an airtight container.
