Hot pepper is a staple in Abruzzo cuisine, dried or infused in oil, the hot pepper is a flavorful and healthy  finishing  touch for sautéed vegetables , soups, but also pasta and stews. It is the hot peppers  season and  our garden has plenty  of these wonderful fruits of different varieties like Trinidad Moruga Scorpion red,  Cayambe, Numex-twilight  and  Naga Morich. Now we are eating  hot peppers just picked,  we spread them over the meals finely minced, but we love eating spicy food for  all the year, so we preserve  hot peppers both dried and infused in extra virgin olive oil. DRIED CHILIES POWDER

Wash and dry the hot peppers

Remove the stem and cut the chilies in half. Arrange the pieces  over a thick layer of paper towels.

Usually the chilies are dried in the sun, but the oven will make the work easier. Put the chilies in the oven at 60 ° C for about 1 hour to remove the major part of the water .

Then put the chilies in the sun, in a well ventilated and dry place for  2-3 days or until the hot peppers are completely dried. Remember to change the paper towel  from time to time. If you live in a humid city, try to continue the drying process in the oven.

When the chilies are dry, grind them  into powder with  a meat mincer. You can  insert at the exit of the meat mincer a freeze bag, wrapping its opening with  a rubber band , in this way you can avoid that the chili flakes and powder spread all over the kitchen. You could also crush dried chilies with a blender.

HOT PEPPERS INFUSED OLIVE OIL

Wash and dry the hot peppers

Remove the stem and cut them in half. Cut the chilies in half lengthwise, or in four depending of their size.

Take a large bowl , put  a layer of coarse salt on the bottom, cover with the hot peppers. Sprinkle with coarse salt and place another layer of hot peppers,  repeat for three or four layers of hot peppers

Cover the bowl with a plastic wrap and top with something heavy  so the excess water will  go out more quickly. Occasionally remove the water on the bottom of the bowl.

After 3 day,  take the peppers and remove the  excess of salt from the surface using a soft toothbrush.

Take a sterilized glass jar,  put some hot pepper slices inside and cover with extra virgin olive oil. The amount depends on how much you want the oil hot and spicy. For example, we have infused one Trinidad Moruga Scorpion red pepper   in 1 cc of extra virgin olive oil.

Keep the jar in a dark, cool and dry place.

Wait at least 3-4 weeks before you open the jar and  savour the oil

DRIED HOT PEPPERS INFUSED  OIL

Take a sterilized glass jar,  place the whole dried chili or the powder  on the bottom of the jar, cover them with extra virgin olive oil; the amount of extra virgin olive oil depends on how much you want  the olive oil hot.

Keep the jar in a dark, cool and dry place.

Wait at least 3-4 weeks before you open the jar and taste the chili infused oil.

TIPS
– Wear gloves to avoiding touch other things while you are working.
– Use a good quality extra virgin olive oil.
– How much heat you can handle in your food ? The Scoville scale is the measurement of the pungency of chili peppers.
