Banana bread is a true American classic recipe, but I’ve tried a different version. I‘ve replaced the butter with the extra virgin olive oil, my favorite ingredient, and the end result was perfect. This healthy banana bread recipe, is deliciously moist, easy to make, also great for those who love chocolate. My own version of this banana cake has delicious chocolate chunks all over the top. Yum!
225 g flour
2 organic eggs
150 g of sugar
70 g of extra virgin olive oil
3 ripe bananas
60 g of dark chocolate coarsely chopped
1 teaspoon of backing soda
½ teaspoon of salt
Grease and flour a 30 cm loaf tin, 5 cm deep.
Heat the oven to 180 °C.
Mesh bananas with a fork in a small bowl.
Put the eggs, sugar and extra virgin olive oil in a deep bowl, whisk until is thoroughly blended, then add mashed bananas and stir.
Mix the flour with the backing soda and salt, add it to other ingredients and stir.
Pour the mixture into the tin, sprinkle chocolate chunks over the top of the cake mixture and bake for about 1 hour.
After 50 ‘check if the cake is cooked by inserting a skewer into the center, it should come out clean.
Leave the banana bread to cool for 30 ‘ then turn it out on a wire rack.
