ORANGE YOGURT CAKE

Dear friends I’m very proud to present to you this delicious orange cake recipe. I’ve made a sponge cake with extra virgin olive oil and greek yogurt flavoured with orange zest, filled with an homemade orange marmalade, finally  covered with a fine cream made with greek yogurt and orange marmalade.
I am really satisfied! This yogurt cake is an amazing dessert, made with fresh and healthy ingredients. If you appreciate low fat cakes and healthy desserts, this  orange yogurt cake is perfect for you. Furthermore, you can start your days with a healthy breakfast, eating  the basic yogurt sponge cake,  without renouncing to the pleasure of a sweet treat.

INGREDIENTS

For yogurt sponge cake
2 organic eggs
175g of sugar
80 g of extra virgin olive oil
125 g of greek yogurt
Grated orange zest (One and a half medium size oranges)
250 g of flour
Baking powder for cake (16 g)

For the filling
Freshly squeezed orange juice (3 oranges)
100 g of sugar
1 tablespoon of flour

For the wetting mixture
100 g of freshly squeezed orange juice
70 g of limoncello

For the orange yogurt cream
350 g of greek yogurt
2 tablespoons of powdered sugar
Freshly squeezed orange juice (2 oranges)
60 g of sugar
2 teaspoons of flour
10 g of gelatin leaf

PREPARATION

For the yogurt sponge cake
Grease and flour a cake pan with a diameter of 24 cm, with the sides that can be opened.
Preheat oven to 180 ° C.
Separate the egg whites from the yolks and put them in different bowls.
Beat the egg whites until foamy.
In the bowl with yolks, add sugar, then add extra virgin olive oil, greek yogurt and the grated orange zest, continue beating until the ingredients are well mixed.
Add the flour and baking powder.
Finally add the egg whites, mix delicately with a wooden spoon.
Pour the mixture into the pan and bake for about 35 minutes. To check if the sponge cake is done, insert a toothpick in the center of the cake. Let the cake cool on a cooling rack.

For the filling
Squeeze the oranges and pass the juice trough a thin colander.
In a small saucepan, mix the sugar with the flour and add the orange juice. Bring it to a boil and simmer for 5 minutes, stirring constantly.
Let the orange syrup cool, it will look like a marmalade.

For the orange yogurt cream
Soak the gelatin leaf in cold water for ten minutes (or follow the instructions on the packet)
Squeeze two oranges and pass the juice trough a thin colander.
In a small saucepan, mix the sugar with the flour and add the orange juice. Bring it to a boil and simmer for 5 minutes, stirring constantly.
Let the syrup cool for 15 minutes, then add the gelatin leaf and stir until the gelatin is completely dissolved in the orange syrup.
In a bowl, mix yogurt, powdered sugar, and the orange syrup when it is slightly warm. Mix well and put the cream in the fridge.

HOW TO ASSEMBLE THE CAKE
Cut the cake in half horizontally, and place each layer on a platter so that the spongy side is facing up.
Wet both layers with the wetting mixture.
Leave some wetting mixture aside.
Spread the orange marmalade on the bottom layer.
Overturn the second cake on top of the first, reassembling the cake.
Wet the top of the cake with the wetting mixture.
Take the yogurt cream from the fridge, mix the cream until the texture will be smooth and soft.
Spread generously the orange yogurt cream over the cake and decorate as you like.
Refrigerate the cake for about three hour or four before serving.
Keep the cake in the fridge no longer than 2 days.

How to assemble a orange cake coated with a yogurt cream

TIPS
This recipe is extremely versatile, for example you could avoid limoncello, or you could replace it with another liqueur. You could try with the juice of a another fruit, like pineapple or kiwi.
