An exciting match on the soccer playing field and a perfect marriage of flavors in the kitchen.
On the occasion of the match between England and Italy for 2014 Brazilian world cup which will take place on Saturday 14th June, we decided to prepare a fusion dish, mixing Italian and English cuisine. This recipe is not a competition between two different culinary tradition, but English breakfast pizza is a perfect marriage between Italian and English flavors. The ingredients of traditional English breakfast are an ideal pizza topping and the extra virgin olive oil balances the flavors of all the ingredients. Many people drink beer with pizza, but in this case we can pair pizza with a red wine. To make the marriage between the English and Italian cuisine extraordinary, you can try a Cerasuolo d’Abruzzo o Montepulciano d’Abruzzo wine. Quantities for a baking tray of 37 x 37 cm and one pizza pan of 32 cm of diameter (all for about 3 – 4 people)
700g of fresh mushrooms
10 slices of bacon
4 -5 organic eggs
350 g of fresh mozzarella
Fresh cherry tomatoes or whole peeled tomatoes.
Extra virgin olive oil.
PIZZA TOPPING PREPARATION
Peel the mushrooms, wash them and cut into slices. Ten minutes before using sliced mushrooms, add a couple of teaspoons of salt, so they will lose excess water. Wash the tomatoes and cut them in half, add a little bit of salt and put them to drain in a colander, in order to lose the excess water(do the same also if you use the whole peeled tomatoes).
Cut fresh mozzarella into small cubes and put them to drain in a colander.
Heat a non stick pan and cook the slices of bacon until start to crisp.
PIZZA DOUGH RECIPE
If you like a thin and crusty pizza base this recipe is perfect for you. Experiment this pizza dough recipe with your favorite toppings.
Quantities for a baking tray of 37 x 37 cm and one pizza pan of 32 cm of diameter (for about 3 – 4 people)
600 g of flour
5 tablespoons of extra virgin olive oil
300g of water
25 g of fresh yeast
Place the flour in a large bowl, make a hole in the center. Dissolve the fresh yeast in the water and pour the mixture into the flour, then add the olive oil. Stir well with a spatula and slowly incorporate the flour to the liquid. Add the salt and continue stirring.
With the help of a little flour, knead the dough with your hands until you have a smooth and homogeneous ball. The pizza dough should be smooth and elastic. Remove the dough and dust the bowl with flour.
Put the dough in the bowl and cover with a wet clean towel and then cover with a big and heavy cloth. The pizza dough must be protected from drafts and must be kept at constant temperature while it rise (preferably about 25 ° C). Let the pizza dough rise for two hours.
HOW TO GARNISH THE PIZZA DOUGH
When the pizza dough is ready, heat oven to 240 ° C (475 F). Take the baking tray and grease it well with olive oil. Prepare a work surface, dust with a little flour. Divide the dough into two parts, one slightly bigger than the other. Take the biggest piece and knead with your hands until it becomes an homogeneous ball. Dust the work surface with flour and roll it out to almost as big as the tray and half a centimeter thick. Transfer the flat dough in the baking tray and push it towards the edges with your fingers.
Brush with olive oil and proceed with the addition of the ingredients. Spread mushrooms, tomatoes, and sausage chunks over the pizza. Add a little bit of chopped mozzarella cheese. Drizzle with extra virgin olive oil. Put the pizza baking tray on the bottom of the oven. When the pizza is almost cooked, remove from the oven and add the eggs, bacon and mozzarella.
Grill until the mozzarella cheese is melted and the bacon crusty. Check if the bottom of the pizza base is crusty and if necessary let it cook for a few minutes on the bottom of the oven.
When the pizza is done drizzle with extra virgin olive oil and serve.
Repeat the same steps for preparing the pizza pan.
