Make your own homemade healthy sandwich bread.
Brioche bread is a soft white bread, perfect for making sandwiches.
This shape is similar to the Italian Christmas Panettone, it stacks well keeping its shape. I make this type of bread when I am preparing a picnic for my family.
They can’t resist taking a sandwich and seeing the tower diminish in size, one layer after another. So if you have to prepare picnic food for your family, this is the ideal picnic recipe.
This bread recipe has been inspired by the French bread brioche recipe, however we have made the recipe healthier by using olive oil instead of butter, and we have achieved good results, it is soft and delicately flavoured.
Try this bread recipe, this brioche bread looks attractive and appetizing, revealing its colourful fillings in layers!
250 g of milk
550 g of all purpose flour
25 g of fresh yeast
10 g of sugar
60 g of extra virgin olive oil
1 organic egg
10 g of salt
1 egg yolk for brushing
a non-stick, removable-bottom panettone paper mold 14 cm of diameter
– Melt the fresh yeast in the warm milk (about 25 C°).
– Put the flour on work surface and make a hole in the center. Pour the milk in the flour and then add the olive oil, egg and sugar. Stir well with a spatula and slowly incorporate the flour to the liquid. Add the salt and continue stirring. With the help of a little ‘flour, knead the dough with your hands until you have a smooth and homogeneous ball. Once you have finished transfer the dough in to the panettone paper mold and cover with a damp cloth.
-Put in the oven at 30 ° C and let it rise for 1 hour. When it is well risen, remove the dough from the oven and preheat the oven to 200 degrees. Meanwhile, brush on to the surface of the dough with the egg yolk. Bake for about 35 minutes until the top is well browned. Check with a wooden skewer or a knitting needle if the bread is done. Remove from the oven and let bread cool on a cooling tray.
-When it is cold, remove the paper mold and cut into thin disks of about half a centimeter.
-Leave aside the top portion of the bread. Separate the discs into pairs to make sandwiches. Spread each disk with mayonnaise and put your favorite filling in. We have made sandwiches with cheese and salami, but you can use all your imagination and fill them with tuna sauce or egg salad. Finally reassemble the stack of sandwiches, cut across the stack in order to get 4 small sandwiches per layer. Cover with the top portion, which you put aside earlier, and serve.
