Apricot cake

Apricot cake 3 - Recipes with olive oil - Gusto Per Amore
This apricot cake  is similar to a roll tart. It is filled with fresh apricot and  dark chocolate shavings. This apricot cake is not too sweet, but is very intriguing. You could enjoy this apricot cake for breakfast or it could be served with a vanilla ice cream ball as after dinner treat.

INGREDIENTS

600g of all purpose flour
Backing powder for cake(16 g)
2 eggs   (1egg yolk ,1 whole egg)
150 g of white sugar
90 g of olive oil
100 ml of whole milk
600 g of apricot pulp
100 g of chocolate shavings
3 tablespoon of brown sugar
1 tablespoon of powdered sugar

PREPARATION

Preheat the oven to 190°C. Peel the apricots and remove the stones, put apricot pulp in the fridge. Stir the eggs and the white sugar together, then add olive oil and milk to have a homogeneous mixture. Put the flour  with the baking powder on the work surface and make a well in the center, add the cake mixture and work the dough with your hand until you have an elastic dough. On a greaseproof paper roll out the dough with a rolling pin to about half a 0.3 millimeters thick, and until it becomes a rectangular shape (about 30X 40 centimeters). Cut the apricot pulp in small pieces and spread them over  the dough, then add the brown sugar and the chocolate shavings. Rollup the dough, help yourself with the greaseproof paper. Cut the roll  in 7 pieces, one of them must be smaller  than others.  Cover a backing tray with the greaseproof paper  and place the rolls drawing a flower with the smaller roll in the center.  Cook the apricot cake in the oven for about  1 hour. After 30 minutes  when the apricot cake surface reveal  a gold color, cover the backing tray with an aluminium foil and continue cooking.

Let the apricot cake cool and then  spread powdered sugar over  the top.
