To make pasta with artichoke I’ve used Farro Pasta because its rustic flavour works well with vegetables. I’ve enriched the dish with black olives and speck ham. To really get to grips with the strong flavour of this dish, we recommend pairing it with a robust extra virgin olive oil and a glass of good Cerasuolo wine.
350 g of farro pasta
200 g of cleaned artichoke heart
60 g of speck ham cut in short strips
6 tablespoon of extra virgin olive oil
20 black olives pitted and cut in half
onion finely chopped
Clean the artichoke and slice them. Leave them in water and a lemon juice. Place 2 tablespoon of extra virgin olive oil in a pan, along with a artichoke and a pinch of salt, cover and let them cook until tender, then crash lightly with a fork. (about 30 minutes)
Bring the water to the boil and when the water boils add the salt and farro pasta .
While cooking the pasta, heat the extra virgin olive oil in a sauté pan. Add the speck ham and onion and sauté until fragrant. Add the black olives and continue cooking for 1 minute. Take the pan off the heat. Drain the farro pasta when it is al dente (about 7minutes, depending on how you like it) and pour it into the sauté pan with speckham and black olives. Add all the artichoke and stir for 2 minutes.
Drizzle extra virgin olive oil on pasta with artichoke to finish its flavor and serve while hot .
What is speck ham? Speck Ham is a lightly smoked raw ham originally from South Tirol –Italy .It is made from the shoulder of the pig, than is slightly smoked and seasoned for 22 weeks. Speck ham can be thinly sliced and served with bread and salad or even used for cooking.
