This mushroom salad is made with raw mushrooms, celery and parmesan shavings and perfectly blends with an extra virgin olive oil with a delicate flavor that encapsulates notes of fresh grass.
300 g of raw cleaned mushrooms (Fresh button mushroom)
100 g of parmesan shavings
70 g of stalk of celery
2 tablespoons of lemon juice
30 g of extra virgin olive oil
A pinch of pepper
Carefully clean the mushrooms and finely slice them. To slice the mushrooms like shavings I usually use a cheese grater or a vegetable peeler. Clean and thinly slice the stalks of celery. Put the mushrooms and celery in a bowl. Add the parmesan shavings. Season to taste with salt, extra virgin olive oil, lemon juice and pepper. Mix gently to combine. If you do not like raw mushrooms you can prepare mushroom salad using cooked mushrooms. Slice the mushrooms and dip them in boiling water for 10 seconds.
